Collard Greens

chopped onions
olive oil
1 large bag frozen collards
lemon juice
fake or real bacon cut into small 1 cm x 1 cm squares

Fry onion in olive oil. Add 'bacon', just before onion is done, andcook thoroughly. Add frozen greens to pan (thaw in microwave if shorton time). Pour in a bit more oil and some lemon juice. Stiroccassionally until collards are defrosted and cooked well. Servewith rice and dal.
