Lentil Stew

1 c brown lentils
1 onion
2 cloves garlic
4 c water
1 chopped tomato
1/2 t salt
1/2 t thyme
1/4 t pepper
1 bay leaf
2 chopped carrots
10 oz package of spinach

Rinse lentils, fry onion and garlic in olive oil. Add lentils,water, salt, thyme, pepper, bay leaf, tomato and boil. Simmerfor about 20 minutes covered. Add carrots and spinach. Bring to a boil. Break up spinach. Simmer 15 more minutes covered or untillentils are tender. Makes 4 servings.
