Fry onion and garlic in plenty of olive oil in cooking pot. When onionsbegin to brown, add tomatoes. Add olive oil liberally and cook on mediumheat. In a few minutes, tomatoes will collapse into a mush. Add basil andoregano. Cook further and add canned tomatoes, if desired (adds red color). Cook until sauce thickens, adding spices as desired. Makes enough forabout 1 person (2 with canned tomatoes).
